bum, bum, bum….muffins!

This is a story of muffins, blueberry muffins to be precise. It was a hot and humid Sunday morning when I felt the urge to bake. So I lined up my ingredients and cookbook.

These are not just any muffins – no Betty Crocker mess here. These blueberry muffins are made from scratch, vegan and wheat free with no added sugar. And they are delicious. (I’m not bragging on myself here. My baking skills are definitely subpar.) All the credit goes to the wondrous BabyCakes, a cookbook by Erin McKenna, chef and owner of the award-winning NYC bakery, BabyCakes.

BabyCakes is a must if you are, or have friends who are, vegan, wheat sensitive or health conscious. Or if you just want to make the perfect cupcake. (According to New York magazine, BabyCakes has the best cupcake in the city.) Considering half the muffins were gone before they cooled, I’d say the cookbook is a good source for the perfect blueberry muffin recipe, too.
